Warm Pear and Blue Cheese Salad

A food combo I can’t live without

Do you have a dish that you just love no matter what mood you’re in? You know, one that you could eat at anytime, anywhere? I do. It’s in this pear and blue cheese salad. Mmmmmmm, pears and prosciutto with rocket and blue cheese: sweet, salty, peppery and softly pungent altogether. In. One. Mouthful. Oh yummy heavenly flavours that I really just could not live without.

I cook the pears in this salad with a little brown sugar and vinegar which gives a lovely caramel flavour, but you could just as easily slice the pears thinly and just toss through the salad with the rest of the ingredients. It’s a mouthwatering knockout either way.

This salad is pretty light and way better for you than your average restaurant version with only 218 calories and 10g of total fat (5g of which is saturated),but if you wanted to lighten it even further you could replace the prosciutto with lean ham. It crisps up just the same and will take it back to 193 calories, 8.5g total fat and 2.5g saturated fat.

What dish or food combo could you NOT live without – no way, don’t even ask me to consider it. Do tell.
