Healthy, Quick and Tasty as All Get Out

Have I mentioned that I LOVE a good salad lately? I think I have once or twice. But it’s true and I’ve made it my mission to bring you lots of lovely fresh salads while the weather is still hot and gorgeous. Well, actually here in Melbourne is hotter than a hot thing one day and cold the next – gotta love Melbourne weather…..

Anyway, back to the salad. It’s got everything you want – heat, punch, crunch and big flavour. I love Asian style salads for this very reason – lots of vegetables and loads of flavour options including ginger, garlic and chillies (my favourite trio). If you’re not keen on too much heat, grab a large chilli and deseed it (the smaller the chilli, the hotter they are).

If you’ve got little ones that just don’t like chilli at all but you do, leave the chilli out of the cooking and sprinkle some fresh chillies over yours. Also, feel free to replace the shaoxing in the dressing with water or half water and half stock if you don’t have any.

I could talk all day about the virtues of this salad but what I love the most is that it’s under 1600 kilojoules (400 calories) and is made in about 15 minutes – including the vegetable chopping. It’s hard to argue with that……
