Slow Roasted Lamb Shanks

An Aussie/Kiwi favourite if ever there was one

Mike’s coming for dinner, let’s have lamb shanks.

Phil’s coming for dinner, let’s have lamb shanks.
Mick’s coming for dinner, let’s have lamb shanks.
Pat’s coming for dinner, let’s have lamb shanks.

Do you see a pattern? These are just a few of the friends that have sat around my table eating slow roasted lamb shanks. You may have guessed that it’s my John’s favourite – actually not just his, it has been requested many a time… Eaten by all those Kiwis and cooked by this Aussie. A true ANZAC effort don’t you think?

John served in the New Zealand Army for 20 years, 16 of which I served with him. You see the Army is not just a job, it’s a lifestyle; you live it regardless of whether you’re the one in uniform. You share a common bond with those around you regardless of rank; an understanding of what the life is like – challenging and sacrificial but also rewarding and honourable. You live together in Army camps, you laugh together at social occasions and over-the-fence bbqs, you raise your children together and you grieve together for lost friends.

Over the years we’ve made so many good friends and yes, we’ve lost some along the way. And every year on 25 April I remember each and every one of them for the great friends they are or were, for the sacrifices they’ve made and are still making, for the better world they believe/d in. And I make slow roasted lamb shanks because that’s what they’d ask for if they were here for dinner.

They shall grow not old, as we that are left grow old.
Age shall not weary them, nor the years condemn.
At the going down of the sun and in the morning
We will remember them.
