Skinny Pesto

Big on flavour, small on calories

I love pesto. In fact I love anything with basil. I can’t think about basil without thinking about my lovely sister-in-law, Kay. Kay is one of those people who can grow anything. An-y-thing! I reckon she just has to smile at a seed and it will flourish. She’s amazing – for so many reasons, but we’re talking about basil here and pesto in particular.

So you can imagine Kay’s vege garden. Are you imagining? Yep, it’s impressive. And the basil, oh, the basil. Big lush bushes of it. It’s everywhere! You can guess that they eat a lot of pesto at Kay’s…..

I’m not talented enough to have big bushes of basil growing outside my kitchen and so I buy it. I was walking passed the herbs at the fresh food market the other day I got a whiff of that distinctive basil smell. Oh my, big lush bunches of it and regardless of not having a plan for it, I couldn’t help taking some home. But what to do with it? Skinny pesto. Oh yeah.

I make my skinny pesto with basil, extra virgin olive oil, lemon juice, garlic and parmesan. It’s super easy and made in a couple of minutes – just whack it all into the processor. Store in an air tight container in the fridge for up to a week.
