Roast Lamb with Pomegranate Glaze – rich and special

Day 7 – 12 Days of Christmas

Now don’t get me wrong, I LOVE turkey and chicken and ham at Christmas. I suspect that I’m a traditional kind of girl. But I also like to mix it up when it comes to food and what could be mixier (is that a word?) than Roast Lamb on 25 December? But not just any old roast lamb (we do that on any given Sunday).

Christmas deserves something special. And when I say special I mean something that we don’t normally do, that looks like we’ve put a humongous effort into but is actually easy and stress-free. That’s my Roast Lamb with Pomegranate Glaze. Mmmmmm, lamb and pomegranate – it’s a classic combination. The sweet tartness of the pomegranate cuts through the richness of the lamb with toe curling, weak kneed, eye rolling perfection.

The main ingredient in the glaze is pomegranate molasses andiIf you’ve never had it, you’re in for a treat. It’s what would you expect from a molasses – thick and rich and concentrated – but it’s also sweet and slightly tart like the fruit itself. I like to serve this gorgeous plate of salty, sweet tartness with my Pomegranate and Cherry Salsa because it adds a light freshness that finishes everything festively.

Now you may be thinking that the lamb in my photo looks a little torched – I like to call it professionally charred….. Any marinade that has sugar will burn more easily than one that doesn’t. It’s nothing to worry about, just keep an eye on it and if it looks like it’s going beyond professionally charred, pop a piece of foil loosely over the lamb and all will be well.

So why did this make the Moodie 12 Days of Christmas?

  • It’s easy peasy lamb squeezy. It looks like you’ve been slaving for hours, but really it’s roast lamb with a little sweet marinade painted over.
  • It truly is one of THE tastiest roasts you’ll eat. Honestly I rave about the combo of lamb with pomegranate, but it’s not frivolous raving. This is YUM.
  • It’s beautiful on the plate with the Pomegranate and Cherry Salsa and a couple of pomegranates for decoration. Christmasy in the extreme.
  • It will make your knees weak so hold on to something. Perhaps a present or two or a glass of wine – that always helps….

Up tomorrow my moodie foodies is Roast Pork with Baked Apples. Okay, not so light in the calorie department but so good that I couldn’t leave it out. It’s Christmas and it’s one of my brother’s faves. And Christmas is all about family, right?
