Watermelon Salsa

This lovely pink salsa is perfect for Summer. It’s sweet, juicy and a little herby. The lime juice adds a bit of tart balance. YUM!

You’ll need

350g (3 cups) cubed watermelon
3 tbsp shredded basil leaves
2 tbsp finely chopped chives
Pinch salt
1 tbsp lime juice
Pinch salt

Let’s go

Combine all ingredients together and serve, or pop into the fridge until you’re ready to serve (although I would serve within an hour or two after combining everything).

Why it’s good for you
I think watermelon’s good for you no matter how you serve it – it’s tasty, juicy and pink! A little more seriously though, watermelon is packed with lycopene which is what gives it it’s lovely colour. Lycopene is a powerful antioxidant that helps with cardiovascular health; it stops your arteries for clogging. Now that’s good for you!
