Tiramisu Meringue Kisses


Serves 8

If you like tiramisu, you’re going to love these. Fluffy coffee meringue sandwiched together with chocolate cream cheese.
Per Kiss: 241kj (57.4cal); 0.5g total fat (0.3g saturated fat)


You’ll need

2 egg whites
1/3 cup caster sugar
1½ tsp ground coffee

Chocolate cream
4 tbsp extra light cream cheese
3 tbsp sifted icing sugar
1 tbsp good quality cocoa

Let’s go

Heat oven to 180°C and line an oven tray with baking paper.

Beat egg whites until soft peaks form. Gradually add sugar, beating well between additions until sugar is dissolved and mixture is thick and glossy. Lightly beat through ground coffee until just combined.  Place heaped tablespoons of mixture onto paper lined tray – you should get 16 meringues. Place tray into oven and turn heat down to 120°C. Bake for 35 minutes. Turn off heat and open oven door to cool completely.

While meringues are cooling make the chocolate cream.  Whisk all ingredients together until smooth, cover and pop in the fridge until you are ready to serve meringues.

Spread the bottom of half of the meringues thickly with chocolate cream and top with another meringue.


Why it’s good for you
Everyone needs a sweet something every now and then and these meringue kisses are just perfect. Reminiscent of Tiramisu, they’re much lighter and better for you.
