Spanish Chorizo Pasta

Smokey chorizo sauteed with spanish onion, chilli and tomato. So delicious served on your favourite pasta.

You’ll need

80gms chorizo sausage, finely sliced or chopped
1 red onion, finely sliced
1 garlic clove, minced
1 red chilli, finely sliced
3/4 cup vegetable stock
1 red capsicum, finely sliced
4 cups cooked pasta
Handful fresh parsley and/or coriander, chopped

Let’s go

Heat a non-stick pan on medium and add chorizo, red onion, chilli, garlic and capsicum. Cook until chorizo is golden and onions are just tender. Add stock and cook through for a minute or so. Toss through pasta, parsley and coriander.

Why it’s good for you
Whilst chorizo does have fat in it, you don’t really need that much to get the wonderful earthy, smokey flavours of Spain. I think this pasta dish is to die for – literally, if someone tries to take some off my plate……
