Roasted Red Pepper Hummus

Lovely fire red hummus made with roasted red peppers (capsicum) and chickpeas.

Per serve: 130kj (31cals); 0.5g total fat (0.1g saturated fat)

You’ll need

200g store bought roasted red peppers*
400g can chickpeas, drained
1 garlic clove, minced
2 tbsp lemon juice
½ tsp cumin
¼ tsp ground chilli pepper (optional but makes for a lovely bit of spice)
1 tsp salt

*Roasted red peppers can be bought in the supermarket aisle usually where you find the olives. While I like to make my own roasted peppers, for this dip it’s just so easy to buy a jar, right?

Let’s go

Place all ingredients into a food processor and process until smooth. Serve on crackers or with crudite or slices of pita bread.

Why it’s good for you
Dips can be sneaky little fat hiders but not this one. This lovely red pepper hummus is just what you need to join in the party without bursting out of your jeans tomorrow.
