Pork Steaks with Warm Fennel Slaw


Serves 4

Tasty pork steaks with warm fennel and apple slaw. It’s a fantastic warmer for cold weather and made in under 20 minutes.

Per serve: 1043.7kj (248.5cals); 7g total fat (2g saturated fat)


You’ll need

2 tsp olive oil
2 fennel bulbs, cored and finely sliced
1 medium onion, sliced
2 garlic cloves, finely sliced or minced
1 large granny smith apple, peeled and cored and finely sliced
Juice of 1 lemon
Salt & pepper
4 lean pork steaks (about 120g each)

Let’s go

To make slaw:
Heat oil in pan and add fennel, onion and garlic with a pinch of salt. Cook on low for 10 minutes until softened. Add apple and lemon juice and cook for a couple of minutes. Serve with pork steaks.

To cook pork steaks:
Heat a frying pan on medium-high. While pan is heating, spray both sides of pork steaks lightly with oil. Cook for 2-3 minutes on each side. Remove from pan and rest in a warm place for a couple of minutes.

Why it’s good for you
I do love a good coleslaw and this warm number is one of my favourites. A little bit of olive oil, loads of vegetables and lean steaks is all you need to make a healthy but gorgeous dinner.
