Fresh Pea and Ham Soup

Serves 1

Fresh pea soup with crispy ham and parmesan shavings. Light, quick and delicious, this is a new take on an old classic.

You’ll need

250gms frozen peas
1 cup stock
½ cup water
½ garlic clove, peeled
¼ onion, finely chopped
25gms lean ham, finely sliced
1 tbsp parmesan cheese
Oil spray

Let’s go

Spray a small saucepan with oil spray and ham. Cook on medium heat until crispy. Remove from pan and keep warm.

Place peas, stock, water, garlic clove and onion into a small saucepan and bring to the boil. Reduce heat and cook for 5 minutes until the peas are tender. Use a blender or stick blender, blitz soup until smooth.

Serve soup with crispy ham topped with parmesan cheese.

Why it’s good for you
Get a daily vegetable fix with this delicious soup. There’s very little fat added and I’ve used lean ham to stir through the soup for added flavour and texture.
