Mango Frozen Yogurt


Serves 6

Fresh mango frozen yogurt is just what you need on hot days. Perfect for a treat or even for breakfast.
Per serve: 516.6kj (123cals); 1.1g total fat (0.7g saturated fat); 1.4g fibre


You’ll need

450g mango flesh (about 2 large)
250g low fat Greek yogurt
¼ cup caster sugar
2 tbsp lemon juice
¼ cup water

Let’s go

Freeze mangoes for 1-2 hours. Place all ingredients into a food processor and blend until smooth and creamy. If the mixture sticks or is a little hard to move, just add a little more water. Serve now.


Why it’s good for you
The wonderful thing about making your own frozen yogurt is that you know what goes into it – fresh fruit, low fat yogurt, a little sugar and some lemon juice. You can make this frozen yogurt using any frozen fruit. I’ve made raspberry, blueberry, strawberry and banana before. Play around with your sweeteners – try brown sugar, maple syrup, honey. You can also use Stevia and other non-sugar sweeteners but make sure you adjust the amount as these tend to be sweeter than sugar.
