Mango Avocado Salad with Lime Vinaigrette


Serves 8

Slices of ripe mango and avocado tossed through soft butter lettuce leaves with spring onion and cranberries for texture, this lovely summer salad is perfect for any occasion.

You’ll need

Juice from 1 lime (2 tablespoons)
1 tbsp olive oil
1 tbsp caster sugar
Pinch salt
2 butter lettuce, leaves separated, washed and dried
1 large avocado (?), sliced
2 large mangoes, peeled and sliced
4 spring onions, sliced finely
¼ cup cranberries

Let’s go

Place lime juice, oil, sugar and salt into a jar and allow to dissolve.

Toss lettuce, avocado, mango, spring onions and cranberries in a bowl and pour over lime dressing. The salad can be made hours before you need to serve it. If you’re worried about discolouration of the avocado buy a Shepherd avo that doesn’t discolour or give it a little spritz of lemon or lime juice. It’s best to add dressing just before serving so the leaves don’t wilt.

Why it’s good for you
Avocado is packed with good oil which is fantastic for cholesterol levels and heart health. Throw in some mango, a few lettuce leaves and a low fat vinaigrette and you’ve got a lovely healthy, low fat salad that’s just so good for you.
