Luscious Lentil Soup


Serves 4

Creamy, earthy lentils slow cooked with aromatic garlic, star anise and five spice. It’s a rib sticker if every there was one and oh so tasty, not to mention healthy, healthy, healthy!

Per serve: 1482kj (354cal); 4.6g total fat (0.8g saturated fat); 12.3g fibre


You’ll need

300gms lentils (brown, red, green or a combination)
2 tsp peanut oil
1 large onion, peeled and finely chopped
2-3 garlic cloves, peeled and bruised (push down with the back of your knife)
3 celery stalks, chopped
2 carrots, peeled and diced
1 star anise
1/2 tsp chinese five spice
Pinch ground coriander seeds
6 cups vegetable or chicken stock (salt reduced)
3 cups water
Chopped parsley to serve
Salt & pepper

Let’s go

Heat oil in large saucepan, add onion, garlic and celery with a pinch of salt and cook until softened. Add other ingredients and bring to the boil. Reduce heat and simmer covered for 1½ hours, stirring occasionally. Keep an eye on the liquid levels and add some water if necessary, although you shouldn’t need it.

Why it’s good for you
Big flavour and loads of fibre. It’s the best lentil soup you’ll ever have and so good for you.
