Low Fat Vanilla Rice Pud with Toffee Apples


Serves 8

Lovely fluffy rice pudding infused with vanilla and cinnamon, topped with a toffee apple sauce. Oh my, this is exactly what you need in the cold months, yes?
For 8 servings: 1243kJ (296cals); 3g total fat (1.8g saturated fat)


You’ll need

1 cup short-grain rice
6 cups low-fat milk
2 tsp vanilla paste or extract
1 cinnamon stick
½ cup sugar
4 granny smith apples, peeled, cored and diced
1/3 cup brown sugar
2 tsp butter

Let’s go

To make the pudding, place the rice, milk, vanilla, cinnamon and sugar in a medium saucepan over medium-low heat. Gently bring the mixture to the boil then reduce the heat to low and simmer for 25 minutes, stirring often to make sure the rice doesn’t catch on the bottom of the saucepan.

Meanwhile, to make the toffee apple sauce, place the apple, sugar and 2/3 cup water in a small saucepan over medium-high heat and bring to the boil.  Reduce the heat to low, cover and simmer gently for 10 minutes, until the apples are softened. Stir through the butter.

To serve, remove the cinnamon stick from the rice and spoon it into bowls. Top with spoonfuls of the toffee apple sauce.
