Low Fat Mango and Passionfruit Trifles


Serves 6

Fresh mango and passionfruit mixed with vanilla sponge and low fat custard, these trifles are quick and easy. Although wonderful at Christmas, these healthy low fat trifles are perfect for any time of the year.
Per serve for 6: 890kj (212cals); 4g total fat (2.6g saturated fat); 1.2g fibre


You’ll need

2 large mangoes, peeled, seed removed
375g passionfruit pulp
125g store bought vanilla sponge (see notes)
1 cup low fat custard
60g (or 1½ cups) whipped cream in a can (see notes)

Let’s go

Chop mangoes into small pieces and set aside. Drain passionfruit pulp from the juice – keeping both. Cut sponge into small pieces.

In each glass layer mango and sponge then drizzle over a tablespoon or two of passionfruit syrup, followed by custard. Repeat the process and store in the fridge until you are ready to serve. Just before serving spoon over some of the passionfruit seeds and swirl over a little whipped cream. Top with a little more passionfruit pulp and serve.

Cook’s Notes

  • You probably won’t use all of the passionfruit syrup and pulp and could probably get away with a 170g can, but I like mine really passionfruity and so use a little more of the syrup. I store the rest in the fridge and have it over yogurt in the morning. Yum!
  • You can usually only buy 2 sponges in a packet at the supermarket, but they freeze well which means you’ll be able to have trifle whenever you want.
  • These lovely trifles can be made up to a day ahead and stored in the fridge.
  • As for the whipped cream in a can, I admit that I don’t usually go for anything that is sprayed out of a can but this is a really nice (and easy) way to have a bit of cream without it costing too much in calories or fat. Oh, and it looks pretty on top of your trifles. But if you don’t like the idea of cream in a can, go for a tablespoon or two of light cream or leave it out completely.
