Low Carb Turkey Tacos

Oh I do so love a taco. This lovely love fat, low carb taco is made with lean turkey, loads of flavour and lettuce taco shells. So. Good.
Per serve: 1278.9kj (304.5cals); 4.7g total fat (1g saturated fat); 8.7g fibre

You’ll need

2 tsp olive oil
170g (1 large) onion, finely chopped
120g (1 large) carrot, finely chopped
100g (1/2) red capsicum, finely chopped
100 (1/2) green capsicum, finely chopped
1-2 large garlic cloves, crushed
500g lean 98% fat free turkey mince
2 tsp cumin
1 tsp paprika
420gm can red kidney beans
400g diced tomatoes
1 cup passata
2/3 cup stock
Coriander for garnish
1-2 tsp chilli flakes (optional)
Salt and pepper
1-2 baby cos lettuce, washed and dried

Let’s go

Heat oil in a large non-stick frying pan and add onion, carrot, capsicum, garlic and turkey. Cook on medium-high for 5-6 minutes. Add remaining ingredients except lettuce and bring to a simmer. Simmer gently for 10 minutes and serve in lettuce cups.

 

Cook’s Notes
Not all turkey mince is made equal. If you want to keep the saturated fat down, make sure you find one that is 98% fat free otherwise you’ll be chowing down on 12%+ fat.

Why it’s good for you
I do so love a good taco but the taco shells are full of fat that I just don’t need when I’m trying to keep it light. So I swap out the taco shells for lettuce taco shells. I also make the taco filling with lean turkey and loads of vegetables. Yum!
