Kale and Pearl Barley Salad with Peanut Dressing

Hearty healthy salad packed with body-loving nutrients and tongue tingling flavour. Shredded baby kale tossed with fluffy pearl barley, herbs and light low fat peanut dressing.

You’ll need

Salad
3/4 cup pearl barley
3 cups vegetable stock
1 garlic clove, bruised
4 cups baby kale (120g), finely sliced
2 spring onions, finely chopped
¼ cup mint leaves, chopped
¼ cup coriander leaves, chopped
1 large red chilli, deseeded and chopped

Peanut dressing
2 tbsp light peanut butter
2 tbsp soy sauce
2 tbsp rice wine vinegar
2 tsp minced ginger
2 tsp caster sugar

Let’s go

Place pearl barley into a small-medium saucepan with vegetable stock and bruised garlic clove. Bring to the boil, reduce heat and simmer covered for about 30 minutes. Drain, discard garlic clove and cool completely.

Toss kale with herbs and chilli and set aside. Place dressing ingredients into a small processor or blender and blend until smooth.

Toss kale with cooled pearl barley and dressing.
