Peanut dressing
2 tbsp light peanut butter
2 tbsp soy sauce
2 tbsp rice wine vinegar

Let’s go

Place pearl barley into a small-medium saucepan with vegetable stock and bruised garlic clove. Bring to the boil, reduce heat and simmer covered for about 30 minutes. Drain, discard garlic clove and cool completely.

Toss kale with herbs and chilli and set aside. Place dressing ingredients into a small processor or blender and blend until smooth.

Toss kale with cooled pearl barley and dressing.

Why it’s good for you
I love a good salad for lunch (or dinner) but they have to be hearty. This gorgeous salad is packed with goodness that will keep you going all day long. Big on fibre from the pearl barley, high in iron from the kale and filling protein from the peanut dressing, this healthy salad will soon become a fave.
