Oven Baked Chips

Serves 6

Oven baked chips with fresh rosemary and sea salt. Lovely light, love fat alternative to deep fried chips.

You’ll need

1kg potatoes, skin on , cubed, sliced or wedge
2 tbsp olive oil
1 tbsp fresh rosemary
Salt and pepper

Let’s go

Heat oven to 200°c and line an oven tray with baking paper (saves on the washing up). In a bowl, toss all ingredients together and arrange evenly on a tray – make sure potatoes aren’t touching too much otherwise they stick together. Bake for 40-60 minutes all depending on how you have cut the chips but you’ll know when they’re ready as they’ll be golden on the outside and soft and fluffy on the inside.

Why it’s good for you
Hot chips are usually deep fried. These are oven baked with a little gorgeous olive oil, fresh rosemary (you could use thyme or any other hard herb) and sea salt.
