Healing Poached Chicken Noodle Soup

A comforting cold buster if ever there was one, this quick Chicken Noodle Soup is PERFECT for when you feel under the weather. With restorative garlic, ginger, leeks and chicken, you’ll feel great in no time.

You’ll need

4 cups stock
4 cups water
2 leeks, finely sliced (6-8 spring onions)
2 large garlic cloves, peeled and bruised*
2-4 tsp freshly grated ginger
2 bay leaves
2 cloves
400g skinless chicken breast, finely sliced
150g wholegrain pasta/noodles, broken into pieces
50g spinach leaves, sliced

Let’s go

Add stock, water, leeks, garlic, ginger, bay leaves and cloves to a medium saucepan and bring to the boil. Reduce heat and simmer for 10 minutes. Add chicken and noodles, bring back up to a simmer and cook for 8 minutes until noodles are soft and cooked through. Add spinach leaves two minutes before the end to soften. Discard bay leaves, cloves and garlic cloves. Serve now while it’s hot.

Cook’s Notes
*Bruising garlic cloves gives you lovely garlicky flavour without it becoming too overpowering. Peel the clove and push down on it with the back of a knife until it looks a little squashed.

 

Why it’s good for you
Chicken Noodle Soup is good for you anytime but especially when you feel a little under the weather. The hot broth (fantastic for rehydration) and protein from the chicken (cell renewal and energy), carbs from the pasta (energy and comfort) and healing properties of ginger and garlic will have you feeling better in no time. Make a big batch because you may just need it tomorrow.
