Granola Parfait


Serves 6

Crunchy cranberry granola with creamy vanilla yogurt and fresh berries. It’s a wonderful way to start the day.

Per serve: 1526.7kj (363.5cal); 5.2g total fat (1.4g saturated fat)


You’ll need

1 cup traditional oats
3 tbsp maple syrup
2 tbsp slivered almonds
2 tbsp pumpkin seeds (pepitas)
1/2 tsp cinnamon
1 tbsp rosewater (optional but awfully good)
1/4 cup dried cranberries

4 cups fresh strawberries, raspberries, blueberries (all or just one, whatever you want)
3 cups low fat vanilla or strawberry yogurt (but make sure you get one that also low in sugar)

Let’s go

To make granola: Heat oven to 200°c and line a tray with baking paper. In a bowl mix all granola ingredients except cranberries together, stirring well to make sure everything is coated. Pour mixture onto tray and bake for 15 minutes, stirring every now and then to ensure the oats brown evenly. Remove from the oven, toss through the cranberries and cool.

To assemble parfait, layer berries, yogurt and granola. Keep layering until you reach the top

Why it’s good for you
It’s oats, yogurt and fruit! But you’d be surprised at how many calories something that looks this healthy can have: the toasted muesli or oats that have been baked in lots of butter and/or oil, the full fat yogurt….. Moodie granola is low in fat and high in flavour.
