Light and fresh flavours of ginger, lemongrass and lime juice mixed with spicy sweet chilli sauce and shao xing wine. Great with dumplings, spring rolls, rice paper rolls, seafood, asian meatballs.

You’ll need

2 tbsp shao xing wine (or dry sherry)
2 tbsp sweet thai chilli sauce
1/2 tsp fresh ginger, grated
1/2 tsp lemongrass, finely chopped
1 tsp lime juice (grate zest before juicing and freeze for another time)

Let’s go

Whisk together and serve.
