Ginger Broccoli Salad


Serves 4

Broccoli stir-fried with fresh Asian flavours makes for a quick and tasty side for any night of the week.

Per serve: 230.6kj (54.9cals); 1.6g total fat (0.2g saturated fat)


You’ll need

400g brocolli
1 tsp sesame oil
1 large garlic clove
2 tsp freshly grated ginger
1 large red chilli, deseeded, finely sliced
2 tbsp oyster sauce
¼ cup water

Let’s go

Slice broccoli lengthways into pieces. Half fill medium-large saucepan with water and bring to the boil. Add broccoli and cook for 1-2 minutes until softened but not cooked through. Drain and refresh in icy water. Drain and pat dry (salad spinners are good for this).

Heat a large non stick frying pan on medium-high and add sesame oil, broccoli and remaining ingredients. Stir-fry until broccoli is warmed through and well coated with sauce (a minute or so).

Broccoli is packed with fibre, vitamins and minerals which are just so good for you. Coupled with an easy tasty sauce, this makes a tasty side dish.
