Garlic Prawns

Panfried prawns marinated in garlic and brandy and panfried to prawny perfection.

Per serve: 1046.4kj (249.9cal); 10g total fat (1.4g saturated fat); 0.3g fibre

You’ll need

1kg green prawns, peeled/deveined*/heads and tails intact
4-5 garlic cloves, minced
3 tbsp brandy
Pepper to taste
1/4 cup olive oil
1/2 cup parsley, chopped
1 lemon
Sea salt to taste

Let’s go

Put prawns, garlic, brandy, pepper, olive oil and half the parsley in a bowl and marinate for an hour so (or longer if you want). Heat a pan or bbq to high and cook prawns until a lovely orangey colour – couple of minutes on each side. Serve with a sprinkle with remaining parsley and a squeeze of lemon.

*To devein a prawn, peel most of the shell away leaving the tail. You will see a dark line going down the back of the prawn. Grab the vein gently and pull it out.

Why it’s good for you
Garlic prawns are usually served soused in oil and although very tasty, not overly good for you. This way of cooking reduces the oil content substantially while keeping all the flavour.
