Fish burgers with lemon mayo

Serves 4

Fresh marinated fish cooked lightly with lemon and dill and served in a burger bun with light lemon mayo. Perfect every time!
Per serve (1 burger): 1493.4 (350.8cals); 9g total fat (1.1g saturated fat); 0.9g fibre

You’ll need

Lemon Mayo
4 tbsp lite mayonnaise
½ garlic clove, minced
Zest of ½ lemon
1 tsp fresh dill fronds

Burgers
4 fish fillets (about 120-150g each)
1 tsp olive oil
Juice of 1 lemon
¼ cup fresh dill fronds
4 bread rolls
1 head soft lettuce (butter lettuce is great)
Bunch of chives, chopped
Salt and pepper

Let’s go

Mix lemon mayo ingredients together and set aside.
Slice bread rolls in half and stuff with lettuce leaves.
Heat large non-stick frying pan to medium, add oil and fish fillets. Cook for 2-3 minutes per side (until fillets are just opaque).
Squeeze over lemon juice and fresh dill, serve on top of lettuce with a dollop of lemon mayo and chives.

Keep your burgers light by using fresh ingredients and lighter sauces. Making your own always keeps it healthier! Good fish to use for the burgers include monkfish, orange roughy, snapper and ling.
