Low Fat Eton Mess


Serves 4

Meringue, berry puree and fresh berries layered with creamy rose-scented vanilla yogurt. A light take on the over-indulgent classic, this dessert is dreamy, creamy and low fat.

Per serve: 1100kj (262cal); 2.4g total fat (1g saturated fat); 2.7g fibre


You’ll need

Berry Puree
300g frozen raspberries
2 tbsp (30g) sugar
2 tbsp water

2 cups thick low fat yogurt (vanilla or strawberry)
300g fresh berries – strawberries, raspberries, blueberries….
50g store bought meringue, slightly crushed (leaving big chunks of meringue)

Let’s go

Make the berry puree by adding ingredients into a small saucepan. Bring to the boil, reduce the heat and simmer for 10 minutes. Push puree through a fine sieve to remove the raspberry seeds and allow to cool completely.

Layer yogurt, fresh berries, puree and meringue in glasses. It’s best to do this just before serving.

Why it’s good for you
Yogurt is packed with calcium and good gut bacteria. Berries are of course, great antioxidants making this dessert hard to beat. Eton Mess is usually made with double cream. This is a much lighter, lower fat version with all the taste and none of the fat.
