Cinnamon French Toast


Serves 4

Thick slices of baguette in sweet cinnamon batter, served with bananas and maple syrup. Salivating much?

Per serve: 1554kj (370cal); 4.7g total fat (1.4g saturated fat)


You’ll need

8 slices day old french stick
4 small bananas
4 tbsp maple syrup
Oil spray
2 tsp icing sugar (confectioner’s sugar), sifted – optional

2 eggs
1 tsp vanilla
1 tsp cinnamon
1/2 cup low fat milk
1 tbsp brown sugar

Let’s go

Heat large non stick pan to medium-high and lightly spray with oil. While pan is heating, whisk all batter ingredients together and pour into a rectangular dish. Place bread into dish and soak both sides until mixture has been soaked into bread. Carefully lift bread out of dish and into hot pan. Cook for 2-3 minutes on each side. Serve topped with slices of fresh banana, a drizzle of maple syrup and a light sprinkling of icing sugar.

Why it’s good for you
Most French toast is made with lashings of butter and lots of eggs. Moodie French Toast reduces the fat and calories without losing any of the flavour. If you don’t like banana, serve with fresh berries.
