Chilli Eggs


Serves 4

Eggs gently poached in a spicy tomato chilli sauce, served on toast. It’s a wonderfully spicy healthy way to start the day.

Per serve: 1213.8kj (289cal); 11.6g total fat (3.4g saturated fat); 2.7g fibre


You’ll need

8 eggs
2 cans diced tomatoes
2/3 cup stock
Good splosh of Tabasco (or any hot sauce)
Pinch sugar
Handful each of fresh parsley and coriander, chopped
Salt and pepper
4 thick slices of your favourite toast

Let’s go

Put tomatoes, stock, Tabasco and sugar in a pan or big saucepan and bring to the boil. Reduce heat and simmer for 5 minutes or so to get the chilli flavours going. Taste for seasoning and crack your eggs into the chilli mixture. Poach to your liking. sprinkle over fresh herbs and serve on warm toast with a good cup of tea. Very restorative…

There is nothing in this recipe that’s bad for you and it’s the answer to your problems (except a good night’s sleep). I’ve given nutritional values for one and two eggs per person just in case you only feel like one egg.

Per serve for 1 egg per person: 913.9kj (217.6cal); 6.6g total fat (1.85 saturated fat);  2.7g fibre
– if you only want one egg, just keep everything else the same but the quantity of eggs.
