Cheesy Broccoli Soup


Serves 3

Comforting cheesy goodness, this soup is easy, low fat and incredibly tasty. If you like broccoli and cheese (and I do), this one’s for you.

Per serve: 939.5kj (223.7cals); 2.5g total fat (1.1g saturated fat)


You’ll need

4 cups stock
2 cups water
430g peeled potato (about 2 large), finely cubed
100g leek, finely sliced
370g broccoli
1 cup low fat milk
2 wedges (30g) Laughing Cow Light

Let’s go

Place stock and water in a medium-large saucepan and bring to the boil. Add potato and leek and cook for 10 minutes. Add broccoli, milk and cheese and bring to a simmer – stirring to melt the cheese. Simmer for 5 minutes. Season with pepper and serve. If you like a thicker soup, process up to a half using a stick blender.

Why it’s good for you
Soups are a fantastic source of vitamins and minerals with all those vegetables, not to mention you can have a BIG bowl and not feel guilty. I’ve made this thick creamy soup using stock, water and low fat milk with a bit of light soft cheese. It tastes like it’s got cream in it. Bonus!
