Cheese Sauce


Makes 2 cups - Serves 6

Creamy, tasty and just as good if not better than its full fat cousin. Lovely light cheese sauce.

Per serve: 303.5kj (72.5cal); 4.6g total fat (2.8g saturated fat); 0.1g fibre


You’ll need

2 tbsp flour
1 1/2 tbsp butter or margarine
1 cup low fat milk
1 cup chicken or vegetable stock
1 tsp dry mustard
Pinch nutmeg
1/4 cup strong cheese e.g. cheddar or parmesan

Let’s go

In a small saucepan melt butter/margarine. Add flour, constantly stirring and brown mixture slightly.

Remove from heat and slowly add milk/stock mixture, whisking constantly to avoid any lumps.

Return to the heat and add cheese, mustard and nutmeg stirring until cheese has melted and sauce thickens.

Why it’s good for you
Traditional cheese sauces use a lot of cheese plus full fat milk and/or cream. The Moodie cheese sauce uses a little strong cheese (really, if you use strong cheese you don’t need very much), plus a combination of low fat milk and stock. There’s still a little butter in there (because you’ve just got to have that!) for gorgeous flavour. Once you’ve tried this low fat cheese sauce, you’ll never go back…
