Barley and Vegetable Soup


Serves 4

Make this when when you have a cold: a big bowl of grainy vegetably comfort.

You’ll need

1 cup soup mix (just grains and legumes)
160g carrot, diced
180g choko, peeled and diced
100g brussels sprouts, sliced
150g celery, diced
150g leeks, sliced
2-3 large garlic cloved, sliced
1/2 cup chopped parsley stalks
2 bay leaves
1 tbsp curry powder
4 cups stock
4 cups water
Pepper to taste

Let’s go

Place all ingredients into a large saucepan and bring to the boil. Reduce heat, cover and simmer for 1 1/2 hours, stirring every now and then to make sure it doesn’t catch on the bottom.
