Bacon, Avocado and Sweet Chilli on Toast

Serves 4

Crispy bacon topped with creamy avocado and drizzled with sweet thai chilli sauce. This is truly a treat for your tastebuds – sweet, salty, silky.

You’ll need

12 low fat bacon middle rashers*
1 avocado, skin removed and sliced
4 tbsp cup sweet thai chilli sauce
4 tbsp fresh coriander, chopped
4 thick slices of your favourite bread, toasted
Olive oil spray
*Based on 98% fat free bacon – all the flavour without the fat

Let’s go

Spray a pan or barbeque with oil and cook the bacon. Lightly spray each toast slice with olive oil (fantastic flavour), top with bacon, slices of avocado and drizzle over the sweet thai chilli sauce. Top with coriander. Oh, and don’t forget the coffee. Gotta have coffee.

Why it’s good for you
Low fat bacon has all the flavour without the calories. Topped with a little creamy avocado and a little sweet spice and you have a gorgeous low fat breakfast or lunch (or dinner for that matter) that will keep you coming back time and time again.
