Avocado Salad Dressing


Serves 8

Gloriously creamy salad dressing that’s actually good for you. If you like your avocadoes, you’re gonna love this.

Per person: 36.3cals; 2.6g total fat (0.5g saturated fat); 1.2g fibre


You’ll need

1 medium avocado (about 220g)
2/3 cup low fat buttermilk
1 small garlic clove, minced
Juice of 1 lime (20-25mls)
1 spring onion, finely chopped
6 drops Tabasco
1/3 – 1/2 cup water (start with 1/3 and add more until it’s just how you want it)
Pinch of salt and pepper

Let’s go

Place all ingredients into a blender or food processor and blend until smooth.

Why it’s good for you
For starters, this dressing is one of the loveliest I’ve ever had – creamy and tangy with a little spice it’s perfect for most salads – green, coleslaw, potato, noodle…. Sure it has fat but it’s good fat (unsaturated fat) which promotes heart health and cholesterol levels. And if that isn’t enough, avocadoes have been found to help the body absorb other nutrients.
