Day 9 – 12 Days of Christmas

We’ve done a lot of big collective dishes in the Moodie 12 Days of Christmas and I thought it would be nice to do something smaller and more individual. It’s nice to be exclusive sometimes don’t you think? You know, something that’s just yours and no one else’s – fingers off, don’t even look at it, it’s MINE I tell you MINE! Okay, I’m climbing down off the ledge now…….

This gorgeous dish is very simple, looks beautiful on the plate and is to-die-for-tasty. When I was writing and testing this little Christmas morsel, Elly and Mia couldn’t get enough – more, more, more (even more popular than the party pies I slapped in front of them the night before because I’d run out of inspiration and energy – it happens…..).

I think what I’m trying to say here is that everyone’s going to love this. I’ve used chicken but you could also use turkey if you just had to have turkey on the 25th – and sometimes you do. I’ve also used prosciutto because I love its salty pigginess, but if you wanted to keep it lighter you could definitely use lean ham which works just as well.

So why did this make the Moodie 12 Days of Christmas:

  • Big on flavour and visual impact, low on effort required – it’s a little Christmas pressie to yourself….
  • You can make it ahead of time, pop it in the fridge and cook when you’re ready – which takes about 15 minutes.
  • It’s Fa La La festive with it’s gorgeous ruby red cranberries.
  • You get one all to yourself. No sharing. Now doesn’t that smack of Christmas spirit?

This brings our focus on Christmas mains to an end – sad. But the good news is tomorrow we get into the good stuff. Desserts! Oh happy of happy news. And I’ve tried to keep them as light as I can – every little bit helps, right?
