Orange and Ginger Baked Salmon

Perfect to serve at Christmas don’t you think? It looks like you’ve been slaving in the kitchen for hours but I’m going to let you in on a little secret. It takes under 20 minutes to make from start to finish. Ta Da! Now that’s a perfect recipe for staying out of the kitchen on Christmas Day if ever there was one.

I’ve used an 800 gram salmon fillet that I bought from the fish market. I love those guys at the fish market – nothing is too much trouble. I got them to skin the salmon (which you don’t have to if you like salmon skin but I’m not a fan) and also to pin-bone it to save myself time. Let’s face it, you really don’t want to be standing over a salmon fillet on Christmas day with your best pair of eyebrow tweezers removing fine bones to make sure there are no trips to the emergency department for choking!

Once the skin and pin-bones are removed, that’s about as hard as it gets with this lovely special salmon recipe. All that’s required is to mix up some soy sauce, rice wine vinegar, orange juice, grated ginger, a garlic clove and a little brown sugar, massage it into the salmon and bake it to personal perfection. We like our salmon quite rare so I only cook it for 12 minutes, but you may like yours cooked a little more so keep it in the oven for 17 minutes. And that’s it! Done and it looks so beautiful on the plate, ready to impress your guests.
