Mushroom and Barley Broth – Big Bowl of Mushroomy Goodness

I do so love a bit of pearl barley in winter don’t you? It’s just so comforting the way it puffs up all soft and chewy and takes on the flavours of everything else around it. And what could be better than to pair it with earthy mushrooms? Oh yum, I say.

This broth is perfect for lunch or dinner. If I’m having it for dinner I serve with some warm crusty bread. But I always make twice as much so I can heat it up to put in a thermos for the girls to take to school. It makes a nice break from sandwiches for us all and it’s healthy, filling them with warm goodness right down to their toes.
