Mum’s Tuna and Tomato Casserole

Lighten up those family favourites

One of my favourite dinners when I was little was Mum’s Tuna Casserole. She made it with rice, cheese sauce, mayonnaise, hard boiled eggs, tuna and tomatoes. It was very creamy and I LOVED it! I was still making it when I moved out of home as it was one of my all time favourite comforting dishes to make.


These days I still love comfort food (as you well know) but I try to lighten it up a little. I don’t want to go without after all, it’s my childhood and it brings back lovely memories but I can’t eat like I did when I was a kid and still be able to fit into anything in my wardrobe.

So I’ve re-written Mum’s Tuna Casserole so I can have it more often – she won’t mind will she? I’ve replaced the heavy cheese sauce and mayo with a lighter white sauce made with low fat milk and stock, I’ve used tuna in springwater and I’ve reduced the amount of eggs used and I’ve loaded up on fresh tomatoes and zucchini. The result? Still yummy. Still comforting. Still a fave.

My girls love it because it’s creamy and casseroley without being too heavy. I like to serve it with a big salad – I do love the crunchy texture of a salad with hot creamy things for some reason. Give it a go and let me know what you think.
