Moroccan Chickpea Curry on Zucchetti

Easy, low fat meat-free midweeker

I don’t know about you, but there are just some nights when I need something big and tasty but light and ‘bum friendly’. Contradiction? Nah, not with this gorgeous Moroccan Chickpea Curry. It’s so full of flavour that your mouth will just burst – ginger, cinnamon, cumin, chilli, coriander, mint…… And chickpeas. Oh, how I love chickpeas, they’re packed with fibre (keeps you clean if you know what I mean), vitamin B (reduces PMT among other things) tryptophan (you’re gonna be happy with more serotonin running around your system) and if that wasn’t enough, they’re low GI (you’ll feel fuller for longer),. Feel healthier already? Yes, yes I do.

I serve this big bowl of Moroccan meat-free morishness with zucchetti which is really zucchini spaghetti. Why? It keeps it light and the chickpeas already give me my fill of carbs (mmmmm, love carbs…..) and when I have served it on rice or pasta, it’s just too heavy. The zucchetti is perfect plus it’s another serve of vegetables and that’s always good, right?

Made in about 30 minutes and under 243 calories with very little saturated fat (only 0.8g) this will be a meat-free midweeker that you’ll make again and again. Oh. So. Good.
