Maple Soy Chicken

Easy, tasty, under 400 calories

I love a quick dinner as much as the next person but it has to taste good otherwise I feel unhappy and dissatisfied. I guess it has something to do with the fact that I don’t eat for fuel but rather for taste and flavour – ALWAYS for taste and flavour. This can, of course, be a little tricky when you’re trying to watch your weight and eat healthily – the balance between flavour and fuel gets a little blurred….

When you’re hungry, it’s easy to fall back on things that are quick and probably tasty but not so light. That’s when you need my Maple Soy Chicken. This yummilicious of yummy dishes marinates skinless chicken thighs in asian aromatics and serves a few lightly poached vegetables on the side with little steamed rice noodles. Big flavour, low kilojoule/calorie and lots of satisfaction for you, guaranteed.

I usually use chicken breasts as they’re naturally lower in fat, but some dishes just need a little extra something and so I’ve used thighs for this recipe. You could certainly use breasts if you like and if you choose to, slice the breasts in half horizontally to make thin steaks – it will cook quicker (a couple of minutes per side) and soak up a load of the marinade. You can also use any vegetables you have in the fridge – broccoli, carrot, beans, bok choy……
