Mango Avocado Salad with Lime Vinaigrette and a Very Berry Salad with Orange Vanilla Syrup

On Wednesday we had Pulled Turkey for a Christmas idea so I thought I’d bring you a salad and a dessert today using this year’s Moodie theme of special, easy and light.

Mango Avocado SaladLet’s start with a simple yet yummy salad using two of my favourite ingredients in the whole wide world – mango and avocado. Every year I wait for mangoes to arrive (at a price that isn’t going to compete with my mortgage) and I’m pleased to say that the time has arrived. Everywhere I turn at my local market there are boxes and boxes of mangoes. And the smell! Oh my, I think I love the smell of mango just as much as the taste!

My next ingredient for the salad is avocado. I reckon that avocado has got to be my most favourite food of all time. Don’t ask me why, it just is. Smooshed on toast in the morning, whizzed up in a beautiful thick dressing, sliced through a salad, sliced over bacon with sweet chilli sauce, I can’t get enough of avo. Love. It. And it’s a natural bestie with mango. The sweetness of the mango with the creamy texture of avo just works every time…..

I didn’t want too much else to compete with these delish ingredients so I’ve tossed them together with soft butter lettuce leaves, a few cranberries for texture and a little spring onion for added flavour. I’ve opted for a very simple vinaigrette using lime juice, olive oil, caster sugar and a pinch of salt. That’s it! Special in its ingredients, easy as it takes about 10 minutes to make and light at 178 calories with less than 1 gram of saturated fat.

I do so love a fruit salad and Christmas down under is the place to celebrate fruit in style. For this Christmas I’ve gone for berries, berries and more berries using strawberries, raspberries, blackberries and blueberries. Oh, and a few cherries because they rhyme with berries. These gorgeous beauties would be just perfect on their own but I wanted to make it a bit spesh for Christmas and so I made an orange and vanilla syrup to go with it. This beautiful salad is made in the time it takes you to wash and dry the fruit and make a quick syrup (which is not long at all). So special, easy and light.
