Low Carb Turkey Tacos

Do you love a good taco as much as I do? All that tasty Mexican spice with comforting meat sauce and corn chippy taco shells makes me want to eat right now. Right. Now! But did you know that the average taco shell has about 100 calories with 5 grams of fat? Now that might not sound like much but when you consider that you can never have just one taco (who does that?) and you’re filling it with all that delish meat sauce not to mention the additional yummies, it all adds up.

It goes without saying that sometimes you just gotta have the corn chippy taco shells, but it’s not good for you all the time so I’ve come up with a  yummilicious way to eat tacos guilt-free as often as you like. Bonus!

I start with the taco shells. Rather than go without (it just wouldn’t be a taco would it?), I swap them out for a big crunchy cos lettuce leaf. Now before you wrinkle your nose at the thought of a lettuce leaf, be open to it cause it’s really, really delish. It’s light and crunchy and just works.

Now let’s turn our chefy little hands to the meat sauce. I use loads of vegetables (carrots, onions, capsicum) for fibre and flavour, beans for fibre, cumin and paprika for an injection of Tex Mex and I swap out the beef for turkey breast mince which is a better source of protein. Turkey breast is naturally low in saturated fat (if you remove the skin) and soaks up all the flavours around it which makes it perfect for a dish like this.

Don’t worry about these low carb tacos not being filling enough, the beans and turkey put an end to that! If you’ve got bigger eaters in your house, you may wish to add a little more turkey but I promise you that there will be no grumbles at the table when you serve these babies.

Serving Suggestions
If you love your corny corn chips you can always crush up a few and serve it on top. That way, you still get a lovely corn injection without all the fat and calories.
Feel free to add your fave taco toppings – avocado, light sour cream, a little grated cheese.

    That sounds amazing. I do have a confession though – I made Mexican Eggs last night as it was quick and easy and I had no inspiration. I used Old El Paso Taco Seasoning. I do love that stuff for a quick Mexican hit:)
