Lemony Creamy Coconutty Yumminess

Who doesn’t love a good sticky, saucy pud? I know I do. This gorgeously gorgeous pudding from the land YUM is one of my faves.

I’ve been thinking about creating something lemony for a while but kept putting it off, putting it off, putting it off…… But not to be labelled a permanent procrastinator, I forced myself into the kitchen, lemons in hand. By the time I emerged I was the proud owner of a Lemon and Coconut Pud. Oh my……. It was lemony (but not too lemony), coconutty (but not overpowering), soft and spongy, with just the right amount of sauce.

Now when I say owner of a Lemon and Coconut Pud, I did not own it for long. No longer had I placed it on the table than it was literally gone. Gone I say! But I didn’t mind, I love it when something is so eagerly scoffed and enjoyed.

And did I mention that it’s light and healthy? I probably don’t have to tell you that because all recipes on The Moodie Foodie are light and healthy, but it’s good to be reminded. I used only a little butter, one egg and a can of light coconut evaporated milk for creaminess. Try it soon, but remember to stand back after you’ve put it on the table, it goes quickly my friends and I wouldn’t want you to be harmed in the process.
