In the mood for Zucchetti and Meatballs

NEW RECIPE – Lovely low fat, low carb, low calorie/kilojoule comfort

In keeping with my turkey theme, I’ve lightened up one of my all time favourite comfort foods, spaghetti and meatballs. Oh be still my beating heart, comfy comfort food from the land Comfortable and just so good.

Why play around with a classic? Well, traditional spag and meatballs is just too heavy for me. Fatty mince, too much oil and big mounds of pasta slows down my digestive system quicker than I can say “oh yum, spag and meatballs!”, leaving me feeling bloated and blurgh.

But this lovely little number lightens everything up in all the right places, leaving me feeling energised but still satisfied. I’ve replaced beef with lean turkey, used oil spray instead of tablespoons of the stuff (one of my favourite light tricks) and I’ve swapped the wheat pasta for zucchini vegetable pasta which is much easier to digest with the meatballs. Mmmmmmm, meatballs…….
