In the mood for Vegetable Fettuccini with Fresh Tomato Sauce

Low carb, low fat, low calorie, big tasting pasta recipe

I am the Queen of Carbs. LOVE them, which is not a bad thing if you eat them in moderation but I confess that I haven’t been exercising much moderation. You see white processed carbs are my comfort, my go to when I’m feeling particularly moodie which has been a lot lately (trust me, you don’t wanna know). And so it’s been goodbye fruit and vegetables and HELLO white bread, crumpets, pasta and crackers. I feel blurgh.

Blurgh isn’t good and I need to do something quick, so I’m starting with my little love affair with white carbs. Yes, I’ve decided to kick my bad white bread and pasta-eating habits to the curb. At least for a while to give myself a little reprogram. We all need to do that every now and then, right?

Replacing the bread is easy; I’ll just go back to my favourite multigrain bread when I need a fix. I don’t seem to go overboard on multigrain even though I adore it – weird, huh? As for the pasta, I haven’t found a wholegrain pasta variety that I like yet, so I’m opting for vegetable pasta which is just what I need right now – low fat, low calorie and low carb.

Vegetable Fettuccini with Tomato Sauce

Have you tried vegetable pasta? I gotta tell you, it’s really great. It keeps those normally heavy dishes like spaghetti bolognese, lasagne and fettuccini light and healthy. You actually come out the other side of dinner feeling light (yet satisfied). Imagine that?

So in celebration of my curb-kicking-carb reprogram I’m bringing you a lovely light dish that’s just perfect for lunch or dinner. It’s a vegetarian dish but you could easily add some chicken or turkey breast or even some lean mince. If you wanted to keep it vego but wanted just a little bit more, add some chickpeas or lentils to the sauce. I make it differently every time depending on my mood: with meat, without meat, just as it is or with an added chickpea or two. It’s a fantastic versatile recipe that’s great to have in your menu file for those days when you need to lighten it up without missing out.
