In the mood for Spring Salad with Green Goddess Dressing

Mum and I made loads of salads when I was growing up and one of her faves was a Ploughman’s Lunch style number with a whole lot of stuff on a plate that you picked at. This fresh Spring Salad is reminiscent of that – picky stuff brought together with a gorgeous green goddess dressing.

Mmmmmmmmm, green goddess dressing. Whilst there is no single way to make green goddess dressing it is traditionally made with a mayonnaise and sour cream base with flavour enhancers like anchovies and herbs. That’s making my bum bigger just typing it.  I’ve moodie-fied my dressing to not only lighten it up but to make it healthier and better for you. I use avocado and buttermilk as my base (good fats in the avo and low fat dairy in the buttermilk) with spring onions, herbs and a few other yummies for flavour. Honestly, it’s eye rollingly good and you can use it on just about anything (wonderful as a base for potato salad or a dressing for a garden salad).

The salad itself is simple and you can use anything you’ve got in kitchen at the time. I make mine with cooked potatoes for carbs, boiled eggs for protein and a swag of vegetables (both raw and blanched) for flavour, fibre, vitamins and minerals. By the time I’m finished filling my plate, it’s a masterpiece that I just can’t wait to get into. Not to mention spooning over that lovely green goddess dressing. What a cool name, Green Goddess Dressing; makes me feel like a goddess, I am in my own head anyway…….

Anyway, grab some lovely fresh vegetables and make this salad. It’s a beautiful, versatile, low fat, healthy salad that you’ll make time and again during the warm months – and probably never the same twice!
