In the mood for Minty Pea Fritters

I’m a big fan of peas. There’s something about those little green spheres of goodness that gets me every time. I love them so much that I’m happy to eat them as a snack; you should try it, grab a bowl and a big handful of peas in their pods, peel and snack away. Just. So. Good.

Another great way to eat peas is in fritters. Mmmmmmmm, warm pea fritters. Now I’m drooling. These gorgeous little beauties are so easy to make and are perfect for lunch or a light dinner with salad.  I use thawed frozen peas for my fritters so I can eat them all year round (and it’s just so easy to pull them out of the freezer when the mood takes me) but you could definitely use fresh. You may want to blanch them in boiling water for a minute or two first though.

Serve them on their own with a squeeze of lemon or add a dollop of natural yogurt with extra mint. Oh, now I’m really drooling……..
