In the mood for Low Fat Vanilla Rice Pudding with Toffee Apples

Do you find yourself wanting desserts more often in the cold months? I do. When it’s warm outside I’m okay without dessert (or at least it doesn’t haunt me) but when it’s cold I’m all in for comforting pies and puddings. What’s with that?

Rather than try to explain it, I’m jumping right into this lovely creamy rice pudding. I’ve used low fat milk to keep the kilojoules and fat down (you could use no fat milk if you wanted to take it further or a dairy-free option if that’s your thing) but believe me, you wouldn’t know it. This pudding is SO creamy it just might be criminal. I’ve flavoured it with vanilla and cinnamon because it’s a classic combination that works every time and I’ve added toffee apple sauce because it’s toffee apple sauce and you can’t beat that.  Oh yum. Creamy vanilla and cinnamon pudding with warm toffee flavoured apples. I don’t think there’s much else to say do you?

 

Healthy Vanilla Rice Pudding

Vanilla Rice Pudding with Toffee Apples

Serves 8
Per serve: 1243kJ (296cals); 3g total fat (1.8g saturated fat).

1 cup short-grain rice
6 cups low-fat milk
2 tsp vanilla extract
1 cinnamon stick
½ cup sugar
4 granny smith apples, peeled, cored and diced
1/3 cup brown sugar
2 tsp butter

To make the pudding, place the rice, milk, vanilla, cinnamon and sugar in a medium saucepan over medium-low heat. Gently bring the mixture to the boil then reduce the heat to low and simmer for 25 minutes, stirring often to make sure the rice doesn’t catch on the bottom of the saucepan.

Meanwhile, to make the toffee apple sauce, place the apple, sugar and 2/3 cup water in a small saucepan over medium-high heat and bring to the boil.  Reduce the heat to low, cover and simmer gently for 10 minutes, until the apples are softened. Stir through the butter.

To serve, remove the cinnamon stick from the rice and spoon it into bowls. Top with spoonfuls of the toffee apple sauce.
