In the mood for Kale and Pearl Barley Salad with Peanut Dressing

High fibre, low fat, low calorie rib sticking salad
Now you know how much I love a good salad and this one is no exception – healthy, tasty, hearty, it’s all good with this one.

I’ve been a fan of kale for a while now (look out for Saturday’s recipe for more fantastic kale), but have recently found baby kale in the supermarkets. Baby kale is sweeter than it’s grown up parent without the slightly bitter aftertaste of some kale varieties.

Packed with iron, fibre, calcium, vitamins A, C and K, kale is also an anti-inflammatory and antioxidant. Oooh, a true super food.

I’ve shredded the kale for the salad, lifted it with coriander and mint (LOVE those 2 together), added a bit of heat with a little chilli and tossed through some cooked pearl barley so it sticks to my ribs. Bringing it all together is my signature low fat peanut dressing. Oh my, how I adore this dressing. It uses light peanut butter so it’s lower in fat than most peanutty sauces or dressings. I really don’t think I could live without a good low fat peanut sauce, but I digress.

Honestly, this salad is not only good for you but it’s also tastier than a tasty thing which is the whole point isn’t it? I cook up some pearl barley on the weekend and keep it in a container in the fridge so I can make this salad in about 5-10 minutes flat.
