In the mood for Avocado Salad Dressing

I’m forever looking for tasty dressings that are low in fat and good for you because I eat so much salad. Love a good salad, in fact I live on them in Summer (bit like soups and stews in Winter), and it’s amazing how you can use the same ingredients but completely change the taste just by using a different salad dressing.

This lovely avocado number is thick and creamy and super, super healthy. It’s made by blitzing avos (obviously), buttermilk, garlic, lime juice, spring onion and a bit of water together. That’s it – just blitz. Wonderful over a simple green salad, it works just as well over potato salad instead of mayo, or even a noodle salad. In fact you could use less water and enjoy it as a dip with vegetable sticks. What a dressing! So many uses.

So if you like avocado, quick get into the kitchen and whip this up. It will keep in an airtight container in the fridge for 3 days.
