In the mood for Asparagus and Goats Cheese Salad

I’m always finding new ideas for salads because I just can’t get enough of them. This one is truly special using lightly blanched fresh asparagus, loads of salad greens, creamy goats cheese and crispy ham. That all sounds yum I know, but the true gem in this salad is the dressing. Made with anchovies (stay with me), lemon zest, garlic and olive oil it brings the entire salad together.

Don’t be put off by the anchovies in the dressing. I’m not a fan of them on pizza or anything else actually except for dressings. They rock in dressings! They bring a salty depth to a salad dressing without fishy anchovy-ness. Perfect for salads so try it next time you make a dressing.
